Step 1
To make this Maharashtrian recipe, knead the dough by mixing flour and water in a bowl. Then leave the dough aside covered for an hour. After this, in a pressure cooker, mix the lentils and water and cook on high heat, and after cooking the pulses, squeeze it well and separate it from the remaining water.Step 2
After this, remove the lentils in a bowl and leave them to cool. Then cook the cold lentils in a hot pan on medium heat and add sugar and 1/2 tbsp ghee to it. Cook on a low flame, stirring constantly, until the dal mixture becomes soft and sticky. Once done, turn off the gas and keep this mixture aside. Step 3
After that, knead the flour once again by adding salt, water and oil one by one, until the dough is Soft
Step 4
After this, grind the mixture of lentils and sugar and if the mixture is too dry then add some milk and grind it. Then add cardamom and nutmeg powder to it. Step 5
Now take the dough equal to the lemon of the dough, prepare a little big dal pill from it. Then sprinkle rice flour and roll out two 7 inch round rotis.
Step 6
Now spread the dal mixture on the rolled dough leaving half an inch from the edges and then cover it with the other rolled bread. After this, once again roll it together and paste it whole by itself. Finally, it will look like a round thick roti, with its edges sticking together perfectly.Step 7
After this, heat the griddle and roast the Puran Poli on it. To cook well from both sides, add pressure in between and keep turning. Pour ghee on the pan and bake it till it becomes evenly brown on all sides, remembering that it should not stick on the pan. Serve hot with tea or coffee. Puran Poli smell is very good
